新疆骏枣营养品质特点及其表征指标初探

Preliminary Research of Nutrition Quality Characteristics and Characterization Indexes of Xinjiang Jun Jujube

摘要: 为了初步探明新疆骏枣营养品质特点及其代表性表征指标,以山西交城骏枣为参照,在获取新疆11县市骏枣中的18项营养品质指标数据的基础上,对数据进行四分位差分析、相关性分析、主成分分析和聚类分析。结果显示,新疆骏枣18项营养品质指标含量均优于交城骏枣;其中还原糖、果糖、葡萄糖、可溶性固形物、蛋白质、Zn、Cu、Fe、P、Ca、总糖、黄酮在对应主成分中的载荷值相对较高,能够较好地反映数据整体变异情况;受试11县市大致可聚为4类,第一类中可溶性固形物整体偏高,第二类铁含量高于其他县市,第三类还原糖、黄酮含量相对较高,第四类蛋白质含量略高于其他县市。因此,还原糖、果糖、葡萄糖、可溶性固形物、蛋白质、Zn、Cu、Fe、P、Ca、总糖、黄酮可作为新疆骏枣品质特点的代表性表征指标,上述结果为进一步深化利用骏枣资源提供理论依据。

Abstract: To provide theoretical basis for further deepening the utilization of Jun jujube resources, the preliminary verification of nutrient characteristics and representative characterization indexes of Jun jujube in Xinjiang was performed. In the present study, using Shanxi Jiaocheng Jun jujube as control, 18 nutrition quality indicators of Jun jujube from 11 counties in Xinjiang were analyzed. The nutritional quality characteristics and representative indicators of Xinjiang Jun jujube were analyzed by the four point difference analysis, correlation analysis, principal component analysis and cluster analysis. The results showed that the overall distribution of 18 quality indexes of Xinjiang Jun jujube were higher than that of Jiaocheng Jun jujube; among the 18 quality indexes, the values of reducing sugar, fructose, glucose, soluble solid, protein, Zn, Cu, Fe, P, Ca, total sugar and flavonoids were relatively high in the corresponding principal components, which could better reflect the overall variation of the data. The 11 counties could be divided into 4 groups, and each had its own characteristics. The quality indexes of sugar, fructose, glucose, soluble solid, protein, Zn, Cu, Fe, P, Ca, total sugar, flavonoids could be used as representative quality characterization indexes of Xinjiang Jun jujube.
