摘要:

燕麦富含的水溶性β-葡聚糖具有降低胆固醇、降血糖和提高免疫能力等生理功能,倍受关注。现就燕麦β-葡聚糖的生理功能、结构和特性、含量测定和提取方法及其在食品中的应用等领域的研究进展进行综述,并对燕麦β-葡聚糖研究存在的问题和今后的研究方向进行探讨。

Abstract:

Oat has the function of reducing cholesterin and blood sugar and it can inrease the immunity, because of its rich β-glucan. In this paper, the fundion, strudure, charaders, measuring and distilling methods of β-glucan and its application in food industry were reviewed, and the problems and further research fields on β-glucan were put forward.
