摘要:

甘薯富含营养成分和生物活性成分,不仅可作为贫穷地区人们的主食,而且因其具有独特的生理保健作用而日益受到人们重视。综述了近年来国内外在甘薯块根、茎叶中营养成分(包括蛋白质、糖类化合物、膳食纤维、矿物质、氨基酸、维生素、黄酮类化合物、多酚类化合物及其他有益成分)及其在改善人群维生素缺乏症状、抗肿瘤、抗突变、抗氧化及降低血脂、胆固醇、血糖和增强人体免疫作用等保健功效方面的研究进展。

Abstract:

Sweet potato is rich in various nutrients and bioactive components. It is not only the staple food for people in poor areas, but also draws more and more attention for its unique physiological health-care functions. This paper reviews the studies on nutritious components of potato root, stem and leaf, including protein, carbohydrates, dietary fiber, mineral, amino acids, vitamins, flavonoids, polyphenols, and other beneficial compositions and their health-care functions in alleviation of avitaminosis and antitumor, antirnutagenicity, antioxidation, antiatheroscloresis, lowering of cholesterol and blood sugar, and enhancing peoples immunity both at home and abroad in recent years.
