Abstract: Food safety incidents attract widespread attention of the whole society, but there isnt comprehensive review about economic impact of food safety incidents in academia. The paper firstly defined the content of food safety incidents, and then reviewed and examined the impact of food safety incidents on consumer purchase behavior, enterprise business activities and food safety regulation. On this basis, the paper pointed out that it was probably the further works for the domestic scholars that defensible product harm crisis, application of experimental economics on food safety incidents’ impact, impact on the industry level and national level.

摘要： 层出不穷的食品安全事件受到全社会的广泛关注，但学术界还未就食品安全事件对各类微观经济主体的影响进行全景式、多层面的梳理。从界定食品安全事件的内涵出发，梳理了单个食品安全事件对消费者购买行为、企业经营活动、食品安全监管部门等微观经济主体的影响。在此基础上提出应运用经济学实验的方法、深入探讨可辩解型食品安全事件的微观效应、理清食品安全事件在更高层次上的效应等反思。
