Abstract: Resistant starch (RS) is a healthy dietary fiber and has direct effects in reducing postprandial blood glucose levels, serum cholesterol levels and glycemic index. Therefore, RS plays an important role in preventing and improving non-communicable diseases, such as obesity, diabetes, cardiovascular diseases and chronic kidney disease. In addition, RS shows its potential value in the development of high-quality foodstuffs, such as bread and dumplings. This paper summarized the functions and types of RS and especially the RS-related genes and molecular mechanism, which was expected to provide valuable information for the further study and molecular breeding of RS in crop.

摘要: 抗性淀粉(resistant starch, RS)是一种健康的膳食纤维,能够降低血糖和血脂,对预防和改善肥胖症、糖尿病、心血管疾病和慢性肾病等非传染性疾病具有重要作用。抗性淀粉在面包、饺子等高品质食品的开发中具有潜在的应用价值,是近年来功能食品领域研究的热点。总结归纳了RS的功能和类型,着重对合成RS相关的酶进行了阐述,并对高RS作物分子育种研究进展进行归纳,以期为作物RS研究和分子育种提供参考。
